Ingredients

Butternut Squash

350g Butternut Squash

Garlic

3 parts Garlic

Olive Oil

3 tbs Olive Oil

Linguine Pasta

350g Linguine Pasta

Sage

Small bunch Sage

Instructions

1- Heat oven to 200C/180C fan/gas 6.

2- Put the squash and garlic on a baking tray and drizzle with the olive oil.

3- Roast for 35-40 mins until soft.

4- Season.

5- Cook the pasta according to pack instructions.

6- Drain, reserving the water.

7- Use a stick blender to whizz the squash with 400ml cooking water.

8- Heat some oil in a frying pan, fry the sage until crisp, then drain on kitchen paper.

9- Tip the pasta and sauce into the pan and warm through.

10- Scatter with sage.
