Salmon Avocado Salad

Ingredients

Salmon

400g Salmon

Avocado

3 Avocado

Cucumber

1 Cucumber

Spinach

400g Spinach

Mint

4 tbs Mint

Lime

zest and juice of 1 Lime

Honey

2 tsp Honey

Olive Oil

3 tbs Olive Oil

Instructions

1- Season the salmon, then rub with oil.

2- Mix the dressing ingredients together.

3- Halve, stone, peel and slice the avocados.

4- Halve and quarter the cucumber lengthways, then cut into slices.

5- Divide salad, avocado and cucumber between four plates, then drizzle with half the dressing.

6- Heat a non-stick pan.

7- Add the salmon and fry for 3-4 mins on each side until crisp but still moist inside.

8- Put a salmon fillet on top of each salad and drizzle over the remaining dressing.

9- Serve warm.
