Ingredients

Chicken

1.5kg Chicken

Red Chilli

3 chopped Red Chilli

Garlic

2 cloves Garlic

Ginger

1 tsp Ginger

Dried Oregano

1 tsp Dried Oregano

Coriander

1 tsp Coriander

Paprika

1 tsp Paprika

Red Wine Vinegar

2 tbs Red Wine Vinegar

Oil

2 tbs Oil

Red Onions

1 sliced Red Onions

Carrots

2 Carrots

Beetroot

1 Beetroot

Cabbage

4 leaves Cabbage

Mayonnaise

2 tbs Mayonnaise

Greek Yogurt

2 tbs Greek Yogurt

Red Wine Vinegar

2 tbs Red Wine Vinegar

Cumin Seeds

1 tsp Cumin Seeds

Instructions

1- STEP 1 Whizz together all of the marinade ingredients in a small food processor.

2- Rub the marinade onto the chicken and leave for 1 hour at room temperature.

3- STEP 2 Heat the oven to 190C/fan 170C/gas 5.

4- Put the chicken in a roasting tray and cook for 1 hour 20 minutes.

5- Rest under loose foil for 20 minutes.

6- While the chicken is resting, mix together the slaw ingredients and season.

7- Serve the chicken with slaw, fries and condiments.
