Ingredients

Beef

500g Beef

Onion

1 chopped Onion

Carrots

2 chopped Carrots

Potatoes

2 chopped Potatoes

Pumpkin

1 small Pumpkin

Dried Apricots

100g Dried Apricots

Beef Stock

2 Litres Beef Stock

Salt

To taste Salt

Pepper

To taste Pepper

Instructions

1- Brown the Beef: In a large pot, brown the beef cubes.

2- Remove and set aside.

3- Sauté Vegetables: In the same pot, cook the onion until translucent.

4- Add carrots, potatoes, and pumpkin, cooking for a few minutes.

5- Simmer: Return the beef to the pot.

6- Add broth and dried apricots.

7- Season with salt and pepper.

8- Simmer for 1-2 hours, until the beef is tender.

9- Serve: Enjoy hot, with a crusty piece of bread.

10- Pro Tips: Brown the beef in batches to ensure it gets a good sear, which adds depth to the stew's flavor.

11- Adding the fruits towards the end of cooking preserves their texture and adds a subtle sweetness to the dish.
