Thai fried rice with prawns & peas

Ingredients

Vegetable Oil

2 tbsp Vegetable Oil

Red Onions

1 sliced Red Onions

Garlic Clove

2 sliced Garlic Clove

Red Chilli

1 sliced Red Chilli

Raw King Prawns

250g Raw King Prawns

Brown Rice

140g Brown Rice

Frozen Peas

75g Frozen Peas

Soy Sauce

1 tablespoon Soy Sauce

Fish Sauce

1 tablespoon Fish Sauce

Coriander

Bunch Coriander

Egg

4 large Egg

Hotsauce

To serve Hotsauce

Instructions

1- step 1 Heat 1 tbsp of the oil in a wok, add the onion, garlic and chilli, and cook for 2-3 mins until golden.

2- Add the prawns and cook for 1 min.

3- Tip in the rice and peas, and keep tossing until very hot.

4- Add the soy and fish sauce, then stir through the chopped coriander.

5- Keep warm while you fry the eggs.

6- step 2 Heat the remaining oil in a frying pan and fry the eggs with some seasoning.

7- Divide the fried rice mix between 4 bowls and top each with a fried egg.

8- Serve scattered with coriander, with chilli sauce, if you like.
