Ingredients

Chicken Breasts

2 Chicken Breasts

Thai Red Curry Paste

2 tblsp Thai Red Curry Paste

Coconut Milk

2 tblsp Coconut Milk

Red Pepper

1 chopped Red Pepper

Courgettes

1 chopped Courgettes

Red Onions

1 cut thin wedges Red Onions

Lime

To serve Lime

Instructions

1- step 1 Fire up the barbecue or heat a griddle pan to high.

2- Tip chicken, curry paste and coconut milk into a bowl, then mix well until the chicken is evenly coated.

3- Thread vegetables and chicken onto skewers.

4- Cook the skewers on the barbecue or griddle for 5-8 mins, turning every so often, until the chicken is cooked through and charred.

5- Serve with herby rice, salad and a lime half to squeeze over.
