Tangy carrot, cabbage & onion salad

Ingredients

Carrots

4 sliced Carrots

Red Cabbage

1/2 Red Cabbage

Red Onions

2 sliced Red Onions

Mint

Handful Mint

Coriander Leaves

Handful Coriander Leaves

Roasted Peanut

Handful Roasted Peanut

Lime

Juice of 2 Lime

Ground Nut Oil

1 tablespoon Ground Nut Oil

Red Chilli

1 chopped Red Chilli

Brown Sugar

1 tablespoon Brown Sugar

Instructions

1- step 1 Tip the carrots, cabbage and onions into a bowl.

2- Make the dressing by stirring the ingredients together until the sugar has dissolved.

3- Pour over salad, tossing the vegetables in the dressing.

4- Add the herbs, toss again, then scatter over the peanuts.
