

500g Leek

3 diced Red Pepper

200g Rice

1 clove finely chopped Garlic

1 L Vegetable Stock

1 tsp Paprika

1 tsp Oregano

1 tsp Parsley

1 tsp Basil

Pinch Salt

Pinch Pepper

Splash Olive Oil
1- 1 Prepare the dish Fry the leeks in a small dash of olive oil for a few minutes until they start to brown.
2- 2 Prepare the Dish Add the roasted red peppers, garlic, stock, herbs, salt, pepper and paprika.
3- Give it a good stir, add the rice and stir again.
4- 3 Leave it to come to the boil.
5- Leave to simmer for 2 minutes.
6- 4 Pour the mixture into a baking tray with a depth of 2 inches or more.
7- Mix thoroughly and ensure equally levelled out.
8- 5 Cooking Place on the bottom self of a preheated oven at 180 degrees.
9- Leave to bake for 1 hour.
10- 6 Serving Once cooked turn off the oven and keeping the door open leave the leek bake to cool for 10 minutes before serving.
