Authentic Laos Tapioca Pudding with Bananas

Ingredients

Warm Water

1 cup Warm Water

Water

4 cups Water

Tapioca

3 tablespoons Tapioca

Coconut Milk

14 oz jar Coconut Milk

Sugar

2 tablespoons Sugar

Banana

3 Cups Banana

Water

4 cups Water

Salt

To taste Salt

Instructions

1- In a bowl of warm water, add tapioca pearls and allow them to soak for 20 minutes.

2- Prepare bananas by peeling them and cutting them into ½ inch slices.

3- Set the slices aside On a stove, pour in 4 cups of water and bring it to a boil.

4- Add in the banana slices.

5- After 20 minutes, drain the tapioca pearls in cold water to allow the pearls to separate from each other.

6- Add the tapioca pearls into the the pot.

7- Allow to simmer for 3 minutes or until the tapioca pearls turn clear.

8- Next, add in sugar and pour in the coconut cream.

9- Stir the ingredients gently for 3 minutes to incorporate the flavors.

10- Add salt to taste.
