Cayman Style Potato Salad

Ingredients

Potatoes

10 Potatoes

Green Pepper

1/2 Green Pepper

Red Pepper

1/4 Red Pepper

Onion

1/2 Onion

Mayonnaise

1 cup Mayonnaise

Mustard

1/4 cup Mustard

Sugar

1 tablespoon Sugar

Black Pepper

1/4 tsp Black Pepper

Beets

1 Can Beets

Peas

1 Can Peas

Eggs

3 Eggs

Instructions

1- Peel and cut potatoes in cubes, boil in salted water until tender.

2- Chop peppers and onion and set aside.

3- Mix together mayonnaise, mustard, sugar and black pepper and set aside.

4- Drain potatoes once tender and place in large mixing bowl.

5- Add remaining ingredients and mix well.

6- The salad may be served warm, but is normally served after it has been refrigerated for 2 to 3 hours.
